1) TEA Rinse or NO TEA Rinse ?

Answer :
There is one thing that almost everyone learns first when first learning how to brew loose leaf tea — dump out the first brew! We do this by pouring hot water over the tea leaves we are about to brew. Then, immediately pouring it out. We also refer to it as “rinsing” your tea, “washing”, or “blanching” it. However, do we always need to rinse our tea ?

Some believe that dumping out the first brew is something that we should do with all loose leaf teas. However, this is not quite the case. Rinsing the tea leaves isn’t a necessary for green tea as the process of green tea series is delicate & it’s best taste at the first few brew. For other tea & compress tea require a good rinse to loosen them up from their compressed shape, releasing all the flavors.

2) Telling water temperature without a thermometer

Answer :
The most important consideration when determining water temperature is the type of tea that is being brewed. As a general rule, lighter styles like green and white teas are best brewed at a relatively low temperature, while darker categories like black tea can be infused with hotter water without sacrificing flavor quality. But how do I do measurement without thermometer at home ?

Look at bubbles & the sound of the boil. When the water is full boil which we called “dragon eyes”. The temperature will be between 95 – 100°c (suitable for black tea & dark tea), while oolong tea water temperature require medium-sized “fish eyes”boil water bubbles, & green tea just require a settle down boil water for a couples of minutes.

3) How to store the tea ?
